I’m back after almost an year. Last one year, blog had taken a backseat. Now slowly I’m getting back on track. Though I’m more into travel and fashion, it’s time to widen my horizon…… It’s been a long time, I wanted to share some of my kitchen experiments with you guys. Now since I’m staying at home taking care of my baby, I get to spend more time in kitchen. Here’s my 1st successful baking experiment post pregnancy- Easy eggless carrot cake!
Easy, cuz I did not use any fancy equipments. I used only whisker, few bowls, cups & spoons….. used all ingredients which are easily available at home, not much preparation needed. I din’t even use a blender & blended it manually & used a microwave.
Eggless, cuz I like the taste of eggless cakes than one’s with eggs.
& Carrot cake, cuz winter is the carrot season. Lovely fresh red carrots are available in market these days and they are very very cheap. I’ve been eating carrots almost everyday in some or the other form!
Carrots are a rich source of vitamin A & you should have it daily. So what better than having it in a cake!!!
Cakes are never healthy but I’ve tried to make it a bit healthier using multigrain flour, Olive oil, less sugar and without frosting. So yayy! You can have it guilt free and not wait for the cheat days, as far as you eat in moderation!!!
PS: I haven’t added any spices or dry fruits cuz I like my carrot cake plain. You can add cinnamon powder, walnuts, resins etc. if you like. I don’t like to add vanilla essence cuz it masks the natural flavour. If you want, you can add that too.
Now jumping on to the recipe….
I used microwave (convection mode) for baking.
Preparation time: 15-20 minutes, Baking time: 45 minutes
Grated carrots: 1 1/2 cup
Multigrain flour: 2 cups
Powdered sugar: 3/4 cup
Salt: 1/2 tsp
Curd: 1 1/2 cup
Milk: 5-7 tbsp
Olive oil: 1/2 cup
Baking powder: 1 tsp
Baking soda: 1 tsp
Take all dry ingredients except sugar in one bowl and whisk until blended.
In a separate bowl, whisk curd, oil & sugar well.
Then, add dry ingredients mixture to it and blend it well. Then add grated carrots to the mixture and mix it again.
Take a cake pan or a microwave bowl and grease it with some olive oil. Transfer the batter into the bowl.
Select convection mode on microwave & preheat at 180 degrees for 20 minutes. To save time, you can 1st start preheating & then do the preparation and blending part.
After preheating, bake at 180 degrees for 40-45 minutes.
Remove the cake once the bowl/pan cools down and cut it into pieces…. Have it with a cuppa tea or ice cream!!!
