Lot of people ask me about my post pregnancy diet. I don’t follow any fancy diet or I don’t cut down on my portions. I just try to eat healthy. So, I thought I’ll share some of my healthy recipes. Here’s my BROCCOLI SOUP.
Broccoli is good source of fiber, protein and contains iron, potassium, calcium, magnesium, selenium, vitamins A,C,E,K, B including folic acid. So there many health benefits of eating broccoli. Let’s go to the 3 step recipe….
Preparation time: 15 min
Cooking time: 10 min
Total time: 25 min
250 gm Broccoli, florets and stem
4-5 garlic cloves, peeled and chopped
Half onion, chopped
Toned milk 200 ml
Salt and pepper to taste
Olive oil 1 teaspoon
Water 1 cup
1. Saute broccoli with garlic and onion till tender (5 min) in a saucepan.
2. Transfer it to a blender, add milk and blend till you get fine paste.
3. Transfer the mixture to saucepan again, add water to get desired consistency, add salt, pepper to taste and boil it.
And your soup is ready to serve!!! It serves 2. But if it’s a major part of your meal like me, it serves 1. I like to have it with sweet corn sauteed with salt and pepper, sauteed mushrooms or stir fried veggies!!!
